From the mountain groves of the Axarquía
Cómpeta sits at 640 metres in the eastern hills of Málaga province, where the Sierra de Almijara meets the Mediterranean. The terrain is steep, the soil is thin, and the groves are small — conditions that produce olives with concentrated flavour and high polyphenol content.
This is not flat-land industrial farming. These are mountain trees on terraced slopes, many of them old growth Verdial and Hojiblanca varieties that have been producing oil for generations.
The altitude, the soil, and the microclimate of this valley give the oil a character you cannot replicate elsewhere.
What sets this oil apart
Early Harvest
Picked in October and November when the olives are still green, capturing peak flavour and the highest polyphenol levels of the season.
Mountain Grown
Groves at 400–700m altitude on steep terraced slopes in the Axarquía. Thin soil, low yield, concentrated character.
Cold Extracted
Processed within hours of picking at temperatures below 27°C, preserving volatile aromatics and fresh green flavour notes.
Single Origin
Every bottle comes from identified groves in and around Cómpeta. No blending with oil from other regions or countries.
Small Batch
Limited production each harvest season. Each batch is numbered and traceable to the grove and pressing date.

The Harvest Case

This is a more effective way to buy, reducing both packaging overhead and transit miles per bottle.
Olive oil shaped by altitude, season, and stone
The groves around Cómpeta are not like the vast plains of Jaén or Córdoba. Here the terrain is vertical, the access tracks narrow, and the harvest still depends on hands and nets more than machines.
The trees grow on rocky terraces built centuries ago. Water is scarce, summers are fierce, and the olives respond by producing fruit that is smaller, denser, and richer in the compounds that define premium oil.
The difficulty of the terrain is what makes the oil worth producing. Easy farming does not make interesting oil.
